Airfyer Egg Mayo Toast

Creamy, tangy egg mayo loaded with crunch and melted cheese on crispy golden toast.

Ingredients
  

  • 2 eggs
  • 2 tbsp mayonnaise 30g
  • ¾ tsp mustard
  • tbsp pickles finely chopped
  • tbsp red onion finely chopped
  • tbsp sweetcorn
  • 30 g grated cheese ⅓ cup
  • Salt & pepper to taste
  • 2 slices bread

Method
 

  1. Boil the eggs and transfer to cold water, peel, and chop.
  2. Make the filling by mixing chopped eggs with mayo, mustard, pickles, red onion, sweetcorn and half the cheese.
  3. Season with salt and pepper.
  4. Spread the mixture evenly onto the bread. and sprinkle remaining cheese on top.
  5. Air fry at 180°C for 5–7 minutes until crispy and golden.
