How to make Airfyer Egg Mayo Toast

Ingredients

  • 2 large eggs
  • 2 tbsp mayonnaise (30g)
  • ¾ tsp mustard
  • 1½ tbsp pickles, finely chopped
  • 1½ tbsp red onion, finely chopped
  • 1½ tbsp sweetcorn
  • 30g grated cheese (⅓ cup)
  • Salt & pepper to taste
  • 2 slices bread

Instructions

1. Boil the eggs

  1. Place eggs in boiling water and cook for 9–10 minutes.
  2. Transfer to cold water, peel, and chop.

2. Make the filling

  • Mix chopped eggs with mayo, mustard, pickles, red onion, sweetcorn, and half the cheese.
  • Season with salt and pepper.

3. Assemble

  • Spread the mixture evenly onto the bread.
  • Sprinkle remaining cheese on top.

4. Air fry

  • Air fry at 180°C for 5–7 minutes until crispy and golden.

Tip

Don’t overload the bread, keeping it slightly compact helps it crisp up better in the air fryer

Storage tips

  • Egg mayo mixture (best stored separately): Keep in an airtight container in the fridge for up to 2 days
  • Do not store assembled toast: The bread will go soggy—assemble fresh before air frying
  • Keep chilled: Because of eggs and mayo, always refrigerate promptly
  • Stir before using: Mix again to refresh texture before spreading
  • Freezing not recommended: The mayo and eggs don’t freeze well and can become watery
