Twix Cookies

Buttery shortbread topped with salted caramel and milk chocolate.

Ingredients
  

Shortbread Biscuit

  • 240 g Butter unsalted, softened
  • 75 g Icing Sugar
  • 240 g Plain Flour
  • 1 tsp Vanilla Extract

Toppings

  • 100 g Caramel
  • 170 g Milk Chocolate melted

Instructions
 

Shortbread Biscuits

  • Pre-heat the oven to 180℃/160℃ Fan.
  • Mix together the softened butter, icing sugar, plain flour and vanilla extract until you get a breadcrumb consistency.
  • Use your hands to form a smooth dough.
  • Roll out the dough to around 1 inch thick and cut small circles.
  • Place onto a lined baking tray and place them in the fridge for 30 mins to firm up.
  • Then place them into the oven at 160°C for 15 mins.
  • Once baked, remove from the oven and allow them to cool completely.

Toppings

  • Cover the biscuits with salted caramel and leave to rest for 10 mins.
  • Cover once again with melted milk chocolate and allow the cookies to rest so that the chocolate hardens.
