Boil the sweet potato for 45 minutes, or until fork-tender.
Drain and let it cool slightly; lightly toss with olive oil, salt and pepper
Air fry at 200°C (400°F) for 5 minutes until slightly crisp and golden.
In a pan over medium heat, cook the ground beef.
Add garlic powder, onion powder, soy sauce, salt, and pepper.
Cook until browned and fully cooked (about 5–7 minutes). Drain excess fat if needed.
In a bowl, add the air-fried sweet potato (slice in half and add some butter and salt), cooked beef, a scoop of cottage cheese, and sliced avocado.
Top with chilli flakes, fresh coriander, or a drizzle of hot honey or hot sauce if desired. Pair with a side salad and enjoy!
