Pre-heat the oven to 175°C and line an 8x8 square pan
Melt the butter and mix in the cocoa powder, set aside
Whisk together the eggs and both sugars until light and fluffy
Add in the butter & cocoa powder mix and vanilla extract and mix until combined.
Sift in the plain flour and fold until combined; bake at 175°C for 20 mins.
Remove from the oven and place the marshmallows onto the brownie. Bake for a further 3 mins
Once the marshmallow is soft, use a spoon to cover the brownie with the soft marshmallow
Pour on the melted chocolate and place on pieces of Lotus Biscoff biscuit
Once it is fully cool, allow it to chill in the fridge for at least 1 hour before cutting. This will ensure it has the neatest cut.
