Salted Caramel & Coconut Oat Cookie bars

These caramel oat cookie bars have a soft chocolate chip oatmeal cookie crust, gooey homemade salted caramel, rich chocolate and coconut. They're filled with all the best flavours and textures!

Ingredients
  

Oat cookie dough
  • 30 g Desiccated Coconut
  • 115 g Unsalted Butter softened
  • 100 g Brown Sugar
  • 50 g White Sugar
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 130 g Plain Flour
  • 80 g Oats
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 100 g Chocolate Chips
Filling
  • 150 g Salted Caramel
  • 100 g Chocolate Chunks

Method
 

Oat Dough mixture
  1. In a mixing bowl, whisk together the butter and both sugars and then add in the egg, vanilla extract and salt and whisk until fluffy.
  2. Sift in the plain flour, baking soda and baking powder and then add in the coconut, oats and chocolate chips. Fold until you get a a thick cookie dough consistency.
  3. Press 3/4 of the dough into an 8x8 square baking tin lined with parchment paper and then place into a pre-heated oven at 175°C for 20 mins.
Assemble
  1. Once baked, remove from the oven and pour of the salted caramel and chocolate chunks.
  2. Place small pieces of the remaining oat dough into the baking tin and then place back into the oven for 20 minutes.
  3. Remove from the oven once baked and sprinkle over some desiccated coconut. Allow it to cool before slicing, enjoy!
