Red Velvet and White Chocolate Cookies

Soft, chewy and delicious red velvet cookies with white chocolate

Ingredients
  

  • 125 g Unsalted Butter softened
  • 75 g Sugar
  • 100 g Brown Sugar
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 1 tsp Red food colouring
  • 200 g White Chocolate chips
  • 265 g Plain Flour
  • 20 g Cocoa Powder
  • 1/2 tsp Baking Soda
  • 1.5 tsp Baking Powder
  • 1/2 tsp Salt

Instructions
 

  • In a mixing bowl, mix together the softened butter, sugar and brown sugar.
  • Add in the egg, vanilla extract and salt and mix until combined.
  • Add in the red food colouring and salt and mix until combined, followed by the white chocolate chips.
  • Sift in the plain flour, baking soda, baking powder and cocoa powder mix until you get a smooth. cookie dough.
  • Roll out 50g dough balls and place in a baking tray lined with parchment paper. Refrigerate for 1 hour before baking.
  • Pre-heat the oven and bake the cookies at 180°C for 12 mins. Let the cookie rest for a while before transferring over to a wire rack.
  • Optionally, drizzle with melted white chocolate and enjoy!
