In a mixing bowl, mix together the softened butter, sugar and brown sugar.
Add in the egg, vanilla extract and salt and mix until combined.
Add in the red food colouring and salt and mix until combined, followed by the white chocolate chips.
Sift in the plain flour, baking soda, baking powder and cocoa powder mix until you get a smooth. cookie dough.
Roll out 50g dough balls and place in a baking tray lined with parchment paper. Refrigerate for 1 hour before baking.
Pre-heat the oven and bake the cookies at 180°C for 12 mins. Let the cookie rest for a while before transferring over to a wire rack.
Optionally, drizzle with melted white chocolate and enjoy!
