Protein Oat Cookie

Soft, chewy, and packed with protein, this high-protein cookie is the perfect healthy snack or post-workout treat, made with oats, banana, peanut butter and your favourite protein powder.

Ingredients
  

  • ½ cup rolled oats
  • 1 scoop protein powder vanilla or chocolate
  • ½ ripe banana mashed
  • 1–2 tbsp water adjust for consistency
  • 1 tbsp peanut butter
  • 1–2 tbsp chocolate chips or chopped dark chocolate
  • Pinch of salt optional
  • Dash of cinnamon or vanilla extract optional

Method
 

  1. Mash banana in a bowl.
  2. Add oats, protein powder, peanut butter, and water.
  3. Stir until a thick dough forms (add a bit more water if too dry).
  4. Fold in chocolate chips.
  5. Shape into a large cookie:
  6. Place the dough onto the tray and flatten slightly into a cookie shape.
  7. Bake in the air fryer at 180C for 7 minutes, or until golden at the edges and just set in the middle.
  8. Cool slightly before enjoying, it’s best warm!
