Pesto Pizza Toast

This pesto pizza toast is a quick and delicious twist on classic pizza, made with crusty bread, basil pesto, melty mozzarella, and fresh toppings. It's ready in minutes for the perfect snack or light meal.

Ingredients
  

  • 2 slices of bread sourdough, wholegrain, or sandwich bread
  • 2 tbsp tomato puree
  • 2 –3 tbsp basil pesto store-bought or homemade
  • ¼ cup grated mozzarella or a cheddar
  • 5 –6 cherry tomatoes sliced
  • red onion diced
  • 1 tbsp olives
  • sweetcorn
  • Italian seasoning for garnish

Method
 

  1. Lightly toast the bread (optional) for a crispier base.
  2. Spread tomato puree over each slice of bread.
  3. Top with cheese, cherry tomatoes, onion, olives or other toppings.
  4. Spread the pesto on top of the cheese
  5. Bake or air-fry until cheese is melted and bubbly.
  6. In oven: 180°C (350°F) for 8–10 minutes
  7. In air fryer: 180°C for 5–6 minutes
  8. Season with Italian seasoning
  9. Optionally Garnish with fresh basil leaves and a light drizzle of olive oil.
