Method
Step 1: Make the Cookies
- Preheat your oven to 180°C and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, and mix until well combined.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the crushed Oreo cookies.
- Divide the dough into 6 equal portions, roll them into balls, and place them on the prepared baking sheet.
- Slightly flatten each dough ball and press some extra crushed Oreo cookies on top for decoration.
- Bake for 10-12 minutes, or until the edges are set but the centers are still soft. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Step 2: Make the Oreo Buttercream
- In a medium bowl, beat the softened butter until smooth and creamy.
- Gradually add the powdered sugar, and mix until light and fluffy.
- Add the vanilla extract and 2 tablespoons of heavy cream. If the buttercream is too thick, add the remaining tablespoon of cream.
- Mix in the crushed Oreo crumbs until well incorporated.
Step 3: Assemble the Cookies
- Once the cookies have completely cooled, pipe or spread the Oreo buttercream on top of each cookie.
- Optionally, sprinkle more crushed Oreo cookies on top of the frosting for extra crunch and decoration.
