Mini Egg Cookie Recipe

Ingredients
  

  • 115 g Unsalted butter room temperature
  • 50 g White Sugar
  • 82 g Light brown sugar
  • 1 Egg large, room temperature
  • 1 tsp Vanilla extract
  • 200 g Plain flour
  • 1/2 tsp Baking soda
  • 1/4 tsp Salt
  • 200 g Cadbury's Mini Eggs
  • 50 g Milk chocolate

Instructions
 

  • Mix the butter and sugar together using an electric whisk on medium for a few minutes until the mixture becomes pale. Add in the egg and vanilla extract and beat until combined.
  • Sift in the flour, baking soda and salt and mix until just incorporated. Add in the mini eggs and milk chocolate and mix in with a wooden spoon.
  • Cover the bowl with some cling film and place into the fridge for at least an hour or freezer for 30 mins (this will make sure the cookies don’t spread out too much when baking).
  • Pre-heat the oven to 180/160 Fan. Roll the cookie dough into small balls around 1 inch in size and place onto a baking tray lined with parchment paper.
  • Place the cookies into the oven for 9 minutes and then take them out of the oven, place on the remaining mini egg chunks and put back into the oven for another 5 mins.
  • Once they come out of the oven. allow them to cool before tucking in; they should be chewy and delicious!
