Halloumi Pasta Salad

A light and filling lunch idea perfect for meal prepping for the whole week.

Ingredients
  

  • 3/4 Cup Cooked Pasta
  • Cucumber
  • Sliced Cherry tomatoes
  • Spinach
  • 1/4 Block Grilled Halloumi
  • Red Pepper
  • 1 tbsp Lemon Juice
  • 2 tbsp Orange Juice
  • 1/2 tbsp Extra Virgin Olive oil
  • Salt and pepper to taste
  • 1/3 tbsp Dijon Mustard

Method
 

  1. Boil the pasta and grill the sliced halloumi.
  2. Chop up the vegetables and the halloumi and toss everything into a mixing bowl.
  3. Make the dressing by putting all the ingredients and drizzling onto the salad.
