Start by making the marinade by adding all of the ingredients into a bowl and mixing until combined.
Add the chicken thighs into the marinade and cover with cling film. Refrigerate overnight or for at least 2 hours.
Make the coating by mixing all ingredients into a bowl and set aside.
Once marinated, take one chicken thigh and place into the coating mix.
Dip back into the marinade and then back into the coating.
Fry in oil for 5-7 mins until the chicken is cooked and the coating is crispy.
Allow to rest for a few mins before serving.
