Egg Tortilla Wrap

Ingredients
  

  • 2 tbsp Olive oil
  • 2 Eggs
  • 1 Tortilla Wrap
  • 1/4 tsp Salt
  • 1/2 tsp Chilli Powder
  • 1/2 Tomato diced
  • 1/2 Onion diced

Method
 

  1. In a pan add a tablespoon of oil and add ½ tomato and ½ onion (diced).
  2. Add in ¼ tsp salt and ½ tsp chilli powder, mix everything together.
  3. Continue cooking until the tomato and onions are very soft.
  4. Transfer the mixture to a bowl and crack into 2 eggs and mix thoroughly.
  5. To the pan add a tablespoon of oil and pour in the egg mixture.
  6. Place the tortilla onto the egg and press down. After a minute, flip the egg and allow the tortilla to get toasted.
  7. Fold in half and remove from the pan; serve with a side salad and enjoy!
