In a pan add a tablespoon of oil and add ½ tomato and ½ onion (diced).
Add in ¼ tsp salt and ½ tsp chilli powder, mix everything together.
Continue cooking until the tomato and onions are very soft.
Transfer the mixture to a bowl and crack into 2 eggs and mix thoroughly.
To the pan add a tablespoon of oil and pour in the egg mixture.
Place the tortilla onto the egg and press down. After a minute, flip the egg and allow the tortilla to get toasted.
Fold in half and remove from the pan; serve with a side salad and enjoy!
