Crumbl Cookies

A soft and crumbly cookie with a creamy and sweet cream cheese icing.

Ingredients
  

Cookie ingredients
  • 70 g Brown Sugar
  • 70 g Sugar
  • 115 g Butter melted
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 220 g Plain Flour
  • 1 tbsp Cornflour
  • ½ tsp Baking Soda
  • ½ tsp Baking Powder
  • ½ tsp Salt
Cream Cheese Frosting ingredients
  • 90 g Butter softened
  • 90 g Cream Cheese
  • 250 g Icing Sugar

Method
 

Crumbl Cookies
  1. Pre-heat the oven to 175°C and line a baking tray with baking paper.
  2. Whisk together both sugars together with the melted butter.
  3. Add in the egg and vanilla extract and whisk.
  4. Sift in the plain flour, cornflour, baking soda baking powder and salt and fold until combined.
  5. Roll 50g dough balls and place onto the baking tray; refrigerate for 1 hour.
  6. Ensure the dough balls are spaced out as they will spread and place into the oven at 175°C for 12 mins. Allow to cool completely before decorating.
Cream Cheese Frosting
  1. Whisk together the butter, cream cheese and icing sugar for around 5 minutes and then add in the vanilla extract and whisk until combined.
  2. Add in the food colouring and mix until fully combined.
  3. Pipe the mixture onto the cookies and pour on some sprinkles.
