Cookies and Cream Cheesecake Bars

This deliciously creamy cookies and cream cheesecake is the perfect no bake dessert.

Ingredients
  

Crust
  • 150 g Cookies and Cream Biscuits crushed
  • 50 g Butter melted
Cheesecake Mixture
  • 250 g Double Cream
  • 70 g Icing Sugar
  • 250 g Cream Cheese
  • 20 Cookies and Cream Biscuits chopped
  • 1 tsp Vanilla Extract
Garnish
  • Cookies and Cream Biscuits a few

Method
 

Crust
  1. Crush the cookies and cream biscuits and mix together with the melted butter.
  2. Press firmly into an 8 inch cake tin lined with baking paper, then set aside.
Cheesecake Mixture
  1. Whisk together the double cream and icing sugar for a few minutes until the cream thickens.
  2. Add in the cream cheese, chopped biscuits and vanilla extract and mix until combined.
  3. Pour the mixture into the baking tin and smooth out. Let this set up in the fridge for at least 2 hours before serving.
  4. Garnish however you'd like, slice into squares and enjoy!
