Cookies and Cream Cheesecake Bars

This deliciously creamy cookies and cream cheesecake is the perfect no bake dessert.

Ingredients
  

Crust

  • 150 g Cookies and Cream Biscuits crushed
  • 50 g Butter melted

Cheesecake Mixture

  • 250 g Double Cream
  • 70 g Icing Sugar
  • 250 g Cream Cheese
  • 20 Cookies and Cream Biscuits chopped
  • 1 tsp Vanilla Extract

Garnish

  • Cookies and Cream Biscuits a few

Instructions
 

Crust

  • Crush the cookies and cream biscuits and mix together with the melted butter.
  • Press firmly into an 8 inch cake tin lined with baking paper, then set aside.

Cheesecake Mixture

  • Whisk together the double cream and icing sugar for a few minutes until the cream thickens.
  • Add in the cream cheese, chopped biscuits and vanilla extract and mix until combined.
  • Pour the mixture into the baking tin and smooth out. Let this set up in the fridge for at least 2 hours before serving.
  • Garnish however you'd like, slice into squares and enjoy!
