Cookies and Cream Brownies

Fudgy, chocolate brownies with cookies and cream biscuits

Ingredients
  

  • 150 g Butter softened
  • 250 g Sugar
  • 3 Eggs
  • 100 g Chocolate melted
  • 1 tsp Vanilla Extract
  • ½ tsp Salt
  • 100 g Plain Flour
  • 30 g Cocoa Powder
  • 17 Cookies and Cream biscuits 9 for the centre of brownie, remainder for topping
  • Nutella optional: to drizzle

Method
 

  1. Whisk together the butter and sugar and then add in the eggs and whisk until light and fluffy.
  2. Add in the melted butter, vanilla extract and salt and whisk until combined.
  3. Sift in the flour and cocoa powder and fold into the mixture until a batter forms.
  4. Pour half of the batter into an 8x8 square tine lined with baking paper and top with 9 Oreos. Pour in the remaining batter and smooth out to fill the tin.
  5. Place into a pre-heated oven 170°C for 30 mins.
  6. Once cooled cut into squares and then place on Oreo pieces and finish with a drizzle of nutella. Enjoy!
