Method
- In a blender, combine all of the dry ingredients. Pour into a bowl and add in the vanilla extract and water and mix until fully combined.
- Stir in the chocolate chips by hand (don’t blend them for that cookie dough bite!).
- Pour the mixture into a jar or container, seal, and refrigerate overnight (or at least 2 hours) to thicken and develop flavour.
- Stir well in the morning. Optionally, top with more chocolate chips, a drizzle of nut butter, or a sprinkle of sea salt for a dessert-like finish.
