Ingredients
Method
- Pre-heat the oven at 175°C and line a baking tray with baking paper.
Cookie
- Whisk together the butter, sugar and brown sugar, then add in the egg and vanilla extract and whisk until you get a light and fluffy consistency.
- Sift in all of the dry ingredients (plain flour, cornflour, baking soda, baking powder, salt and cinnamon) and mix until combined.
Cookie coating
- Mix together the sugar, brown sugar and cinnamon in a bowl and set aside.
- Roll 30g cookie dough balls and roll in the coating mixture.
Assemble
- Place the cookie dough balls onto the lined baking tray and flatten slightly.
- Bake in the pre-heated oven at 175°C for 12 mins. Remove them from the oven and allow to cool completely.
Buttercream
- Whisk together the butter, icing sugar, milk and cinnamon until you get a light and fluffy butter cream.
- Pipe on the buttercream using a piping bag or spoon and dust a little cinnamon on over the cookie.
