Churro Cookies

Ingredients
  

Cookie
  • 115 g Unsalted Butter softened
  • 50 g Sugar
  • 100 g Brown Sugar
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 225 g Plain flour
  • 1 tbsp Cornflour
  • 1/4 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 tsp Cinnamon
Cookie Coating
  • 1 tbsp Sugar
  • 1 tbsp Brown Sugar
  • 1/2 tsp Cinnamon
Buttercream
  • 100 g Unsalted Butter softened
  • 200 g Icing Sugar
  • 1 tbsp Milk
  • 1/2 tsp Cinnamon

Method
 

  1. Pre-heat the oven at 175°C and line a baking tray with baking paper.
Cookie
  1. Whisk together the butter, sugar and brown sugar, then add in the egg and vanilla extract and whisk until you get a light and fluffy consistency.
  2. Sift in all of the dry ingredients (plain flour, cornflour, baking soda, baking powder, salt and cinnamon) and mix until combined.
Cookie coating
  1. Mix together the sugar, brown sugar and cinnamon in a bowl and set aside.
  2. Roll 30g cookie dough balls and roll in the coating mixture.
Assemble
  1. Place the cookie dough balls onto the lined baking tray and flatten slightly.
  2. Bake in the pre-heated oven at 175°C for 12 mins. Remove them from the oven and allow to cool completely.
Buttercream
  1. Whisk together the butter, icing sugar, milk and cinnamon until you get a light and fluffy butter cream.
  2. Pipe on the buttercream using a piping bag or spoon and dust a little cinnamon on over the cookie.
