Ingredients
  

Cookie

  • 115 g Unsalted Butter softened
  • 50 g Sugar
  • 100 g Brown Sugar
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 225 g Plain flour
  • 1 tbsp Cornflour
  • 1/4 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 tsp Cinnamon

Cookie Coating

  • 1 tbsp Sugar
  • 1 tbsp Brown Sugar
  • 1/2 tsp Cinnamon

Buttercream

  • 100 g Unsalted Butter softened
  • 200 g Icing Sugar
  • 1 tbsp Milk
  • 1/2 tsp Cinnamon

Instructions
 

  • Pre-heat the oven at 175°C and line a baking tray with baking paper.

Cookie

  • Whisk together the butter, sugar and brown sugar, then add in the egg and vanilla extract and whisk until you get a light and fluffy consistency.
  • Sift in all of the dry ingredients (plain flour, cornflour, baking soda, baking powder, salt and cinnamon) and mix until combined.

Cookie coating

  • Mix together the sugar, brown sugar and cinnamon in a bowl and set aside.
  • Roll 30g cookie dough balls and roll in the coating mixture.

Assemble

  • Place the cookie dough balls onto the lined baking tray and flatten slightly.
  • Bake in the pre-heated oven at 175°C for 12 mins. Remove them from the oven and allow to cool completely.

Buttercream

  • Whisk together the butter, icing sugar, milk and cinnamon until you get a light and fluffy butter cream.
  • Pipe on the buttercream using a piping bag or spoon and dust a little cinnamon on over the cookie.
