Cheesecake Cookie Bars
A cheesecake cookie bar combines a rich, creamy cheesecake layer with a buttery, chewy cookie base.

Cookie Dough
- 160 g Unsalted Butter softened
- 130 g Brown Sugar
- 100 g Sugar
- 1 Egg
- 1 tsp Vanilla Extract
- 1/2 tsp Salt
- 200 g Chocolate Chips
- 240 g Plain Flour
- 1/2 tsp Baking Soda
Cheesecake Mixture
- 225 g Cream Cheese
- 100 g Sugar
- 1 Egg
- 1 tsp Vanilla Extract
Cookie Dough
Blend together the butter, brown sugar and sugar with a hand whisk (feel free to use a regular whisk).
Add in the egg, vanilla extract and salt and blend until combined; then add in the chocolate chips and mix in.
Sift in the plain flour and baking soda and mix until fully combined. You should get a thick cookie dough consistency.
Take 2/3 of the cookie dough and press it into a 8 inch baking pan lined with baking paper. Set aside and make the cheesecake mixture.
Cheesecake Mixture
Whisk together the cream cheese, sugar, egg and vanilla extract until you get a creamy consistency.
Pour the mixture into the baking tin directly on top of the cookie dough.
Using the remaining 1/3 cookie dough, scatter small chunks over of the cheesecake mixture.
Place the baking tin into a pre-heated oven at 175℃ for 35 mins.
Allow it to cool fully, preferably overnight in the fridge before slicing into bars.
