Cookie Dough
- Blend together the butter, brown sugar and sugar with a hand whisk (feel free to use a regular whisk).
- Add in the egg, vanilla extract and salt and blend until combined; then add in the chocolate chips and mix in.
- Sift in the plain flour and baking soda and mix until fully combined. You should get a thick cookie dough consistency.
- Take 2/3 of the cookie dough and press it into a 8 inch baking pan lined with baking paper. Set aside and make the cheesecake mixture.
Cheesecake Mixture
- Whisk together the cream cheese, sugar, egg and vanilla extract until you get a creamy consistency.
- Pour the mixture into the baking tin directly on top of the cookie dough.
- Using the remaining 1/3 cookie dough, scatter small chunks over of the cheesecake mixture.
- Place the baking tin into a pre-heated oven at 175℃ for 35 mins.
- Allow it to cool fully, preferably overnight in the fridge before slicing into bars.
