How to make Sweet Potato, Beef & Cottage Cheese Bowl
Ingredients
- 1 large sweet potato, peeled
- 1 tbsp olive oil
- Salt & pepper to taste
- 200g lean ground beef
- ½ tsp garlic powder
- ½ tsp onion powder
- 1 tsp soy sauce
- 150g cottage cheese
- 1 avocado, sliced or diced
- Optional toppings: chilli flakes, coriander, hot honey, hot sauce or balsamic glaze
Instructions
- Boil the sweet potato for 45 minutes, or until fork-tender.
- Drain and let it cool slightly; lightly toss with olive oil, salt and pepper
- Air fry at 200°C (400°F) for 5 minutes until slightly crisp and golden.
- In a pan over medium heat, cook the ground beef.
- Add garlic powder, onion powder, soy sauce, salt, and pepper.
- Cook until browned and fully cooked (about 5–7 minutes). Drain excess fat if needed.
- In a bowl, add the air-fried sweet potato (slice in half and add some butter and salt), cooked beef, a scoop of cottage cheese, and sliced avocado.
- Top with chilli flakes, fresh coriander, or a drizzle of hot honey or hot sauce if desired. Pair with a side salad and enjoy!

Storage tips
Fridge: Store each component separately in airtight containers for up to 3 days.
Reheat: Reheat the beef and sweet potato in the microwave or air fryer. Add avocado and cottage cheese just before serving.
Freezer: Only the beef is freezer-friendly; freeze in portions for up to 1 month.
