Smore’s Brownies
I think everyone loves smore’s; the ooey-gooey marshmallow, melted chocolate and crunchy biscuit make the best combo. I decided with this recipe that I’m going to take it up a notch and incorporate these flavours into a brownie. These smore’s brownies were really delicious and I actually had a lot of fun with this recipe, mainly because the melted marshmallow was so satisfying to work with. I also used Lotus Biscoff cookies to elevate the flavour and I was really happy with how they turned out. The hard chocolate layer on the top was a great idea as well because it gave the brownie a clean and precise detail.

HOW TO MAKE SMORE’S BROWNIES
These brownies do look a little intimidating to make because there are a few different components, however they’re simple and fun to make. I personally had a lot of fun making these, especially with the gooey marshmallow.
BROWNIE
- Firstly, pre-heat the oven to 175°C and line an 8×8 square pan with greaseproof paper; this will help the brownie to release from the pan much easier.
- Starting with the brownie batter, you want melt the unsalted butter and mix in the cocoa powder. Once it is mixed in, set aside.
- Next you want to whisk together the eggs and both sugars until light and fluffy.
- Pour this into the other bowl with the butter and cocoa powder and mix until combined.
- Add in your vanilla extract and any chocolate chunks you want to add to the brownie batter and mix until fully combined.
- Sift plain flour into the bowl and fold until combined. You want to bake at 175°C for 20 mins.
MARSHMALLOW
- Get your marshmallows ready because once the brownie is baked, you will need to remove it from the oven and place the marshmallows onto the brownie. Bake for a further 3 mins, they will need this much time to become soft in the oven.
- Once the marshmallow is soft, you will be able to use a spoon to gently spread the softened mallow to cover the brownie (this part is so satisfying). Make sure you spread the mallow all the way to the edges and in the corners of the brownie as well so that its fully coated. You want there to be marshmallow in every delicious bite!
CHOCOLATE
- Once you’ve done this, melt the chocolate of your choice and pour over the marshmallow. Gently spread it all over the brownies so that it’s fully covered and no marshmallow is visible.
BISCUIT
- Crush up some Biscoff biscuits and place them on top of the chocolate whilst its still melted. This will make sure that the biscuits stay in place once the brownie has fully cooled.
- Once the brownie has cooled completely, place in the refrigerator to chill for at least an hour before cutting. This will allow you to cut the brownie neatly.

- Decadent Brownie Base – Start with a rich and fudgy brownie base. Choose a high-quality chocolate and follow a reliable brownie recipe for that indulgent texture.

- Chill for Clean Cuts – For neater slices, chill the brownies in the refrigerator for a couple of hours before cutting. This firms up the layers and makes them easier to handle.

Ingredients
Brownie Batter ingredients
- 150 g Butter melted, browned
- 75 g Cocoa Powder
- 100 g Brown Sugar
- 150 g Sugar
- 3 Eggs
- 1 tsp Vanilla Extract
- 100 g Plain Flour
- 100 g Chocolate Chips
Smore's ingredients
- 8-10 Marshmallows medium size
- 200 g Chocolate melted
- 5 Lotus Biscoff biscuits in pieces
Instructions
- Pre-heat the oven to 175°C and line an 8×8 square pan
- Melt the butter and mix in the cocoa powder, set aside
- Whisk together the eggs and both sugars until light and fluffy
- Add in the butter & cocoa powder mix and vanilla extract and mix until combined.
- Sift in the plain flour and fold until combined; bake at 175°C for 20 mins.
- Remove from the oven and place the marshmallows onto the brownie. Bake for a further 3 mins
- Once the marshmallow is soft, use a spoon to cover the brownie with the soft marshmallow
- Pour on the melted chocolate and place on pieces of Lotus Biscoff biscuit
- Once it is fully cool, allow it to chill in the fridge for at least 1 hour before cutting. This will ensure it has the neatest cut.
