Why you’ll love this recipe for Single Serve Cookie

Only takes a few mins to prepare: If you’re craving a cookie right now, then with a single-serve recipe, you can have a warm, freshly baked cookie in just a few minutes. It’s the ultimate instant gratification for your sweet cravings.

Portion Control: Single-serve cookies are perfect for those times when you want a treat but don’t want to overindulge. They offer built-in portion control, ensuring you enjoy just the right amount of sweetness.

No Leftovers to Resist: One of the challenges with baking a full batch of cookies is the temptation of having leftovers. With a single-serve recipe, there are no lingering cookies to resist, making it an excellent option for those practicing moderation.

Customisation: Single-serve recipes often allow for easy customisation. You can experiment with different add-ins, like chocolate chips, nuts, or dried fruit, to tailor the cookie to your current cravings.

Freshness Every Time: You can get a freshly baked cookie every time, so if you love the taste of a cookie straight out of the oven, this recipe is perfect.

How to make a Single Serve Cookie

Mix Ingredients

  1. There are not many steps to this recipe and can be made quickly and in one bowl. You need to start by mixing together the softened butter and both the white and brown sugar. When the butter is softened it is much easier to mix with the sugar.
  2. Next add in the vanilla extract, salt and milk. Mix this until it is all well combined, it should be quite runny at this stage but will firm up once you add in the flour.
  3. Add in the sifted plain flour and mix until combined. By sifting the flour and removing the lumps, it will help your cookie to have a smoother and more delicious texture.
  4. Add in the chocolate chips and mix them into your batter. You can add as many or as little chocolate chips as you like. Get creative with the chocolate by chopping up your favourite chocolate bar or adding a mixture of white, milk or dark chips.

Refrigerate

  1. Place the dough into the fridge for at least 10 mins to firm up. This will help stop the cookie from spreading too much and keep a round shape.
  2. Place the cookie dough onto a lined baking tray and top with a few chocolate chips.

Bake

  1. Once your oven is pre-heated to 180°C, place your baking tray into the oven.
  2. It shouldn’t take very long for the cookie to bake, so remove from the oven after around 12 mins. Let it cool for a few minutes before tucking in; enjoying it warm will be delicious but if you want to save it for later, then eating fully cooled will be just as delicious!

Enjoy!

  1. Enjoy with a glass of milk or tea. I also love having cookies and coffee together because I think the combination of sweet cookies and bitter coffee taste amazing.
  2. Feel free to double the quantity if you don’t want to share! I like to make two single cookies on Sunday mornings so that my husband and I can enjoy one each.

Top tips for the perfect Single Serve Cookie

  1. Ingredients at Room Temperature: Ensure all of your ingredients come to room temperature  as this ensures even mixing and better incorporation of ingredients.
  2. Proper Mixing: Mix all the ingredients thoroughly but don’t overmix. Overmixing can lead to a tougher texture in the final product.
  3. Customise with Add-Ins: Add your favourite mix-ins, such as chocolate chips, nuts, or dried fruit, to personalise your single-serve cookie. Be creative and tailor the flavour to your liking.
  4. Adjust Sweetness to Taste: Be sure to adjust the amount of sugar to your taste preferences. If you prefer a sweeter cookie, you can add a bit more sugar, and if you like it less sweet, you can reduce the sugar quantity.
  5. Watch for Texture: Keep an eye on the texture of the cookie as it cooks. The centre should be soft and gooey, while the edges may appear and don’t overcook, as this can result in a dry cookie.

More tips

  1. Rest Before Enjoying: Allow the cookie to rest for a minute or two after baking as the resting time helps it set and enhances the texture.
  2. Top with Ice Cream or Toppings: Take your single-serve cookie to the next level by topping it with a scoop of ice cream, a drizzle of caramel, or a sprinkle of sea salt. This adds extra decadence and flavour.
  3. Experiment and Have Fun: Feel free to experiment with different flavourings and textures. You can try adding a pinch of cinnamon, or even a dollop of peanut butter to elevate the taste.
  4. Chill the cough: Be sure to chill the cookie dough before you bake as this will help to enhance the flavour and produce a better round cookie shape.
  5. Pre-heat the oven: Make sure you pre-heat the oven as this ensures that cookies start cooking at the right temperature and will bake evenly.
