- 30 g Desiccated Coconut
- 115 g Unsalted Butter softened
- 100 g Brown Sugar
- 50 g White Sugar
- 1 Egg
- 1 tsp Vanilla Extract
- 130 g Plain Flour
- 80 g Oats
- 1/2 tsp Baking Soda
- 1/2 tsp Baking Powder
- 1/2 tsp Salt
- 100 g Chocolate Chips
Filling
- 150 g Salted Caramel
- 100 g Chocolate Chunks
How to make Salted Caramel & Coconut Oat Cookie bars
Oat Dough mixture
- In a mixing bowl, whisk together the butter and both sugars and then add in the egg, vanilla extract and salt and whisk until fluffy.
- Sift in the plain flour, baking soda and baking powder and then add in the coconut, oats and chocolate chips. Fold until you get a a thick cookie dough consistency.
- Press 3/4 of the dough into an 8×8 square baking tin lined with parchment paper and then place into a pre-heated oven at 175°C for 20 mins.
Assemble
- Once baked, remove from the oven and pour of the salted caramel and chocolate chunks.
- Place small pieces of the remaining oat dough into the baking tin and then place back into the oven for 20 minutes.
- Remove from the oven once baked and sprinkle over some desiccated coconut. Allow it to cool before slicing, enjoy!
