Making the Caramel Layer:

Oat cookie dough

  • 30 g Desiccated Coconut
  • 115 g Unsalted Butter softened
  • 100 g Brown Sugar
  • 50 g White Sugar
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 130 g Plain Flour
  • 80 g Oats
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 100 g Chocolate Chips

Filling

  • 150 g Salted Caramel
  • 100 g Chocolate Chunks

How to make Salted Caramel & Coconut Oat Cookie bars

Oat Dough mixture

  • In a mixing bowl, whisk together the butter and both sugars and then add in the egg, vanilla extract and salt and whisk until fluffy.
  • Sift in the plain flour, baking soda and baking powder and then add in the coconut, oats and chocolate chips. Fold until you get a a thick cookie dough consistency.
  • Press 3/4 of the dough into an 8×8 square baking tin lined with parchment paper and then place into a pre-heated oven at 175°C for 20 mins.

Assemble

  • Once baked, remove from the oven and pour of the salted caramel and chocolate chunks.
  • Place small pieces of the remaining oat dough into the baking tin and then place back into the oven for 20 minutes.
  • Remove from the oven once baked and sprinkle over some desiccated coconut. Allow it to cool before slicing, enjoy!
