How to make Pesto Pizza Toast

Ingredients (makes 2 slices)

  • 2 slices of bread (sourdough, wholegrain, or sandwich bread)
  • 2 tbsp tomato puree
  • 2–3 tbsp basil pesto (store-bought or homemade)
  • ¼ cup grated mozzarella or a cheddar
  • 5–6 cherry tomatoes, sliced
  • red onion, diced
  • 1 tbsp olives
  • sweetcorn
  • Italian seasoning (for garnish)

Instructions

  1. Lightly toast the bread (optional) for a crispier base.
  2. Spread tomato puree over each slice of bread.
  3. Top with cheese, cherry tomatoes, onion, olives or other toppings.
  4. Spread the pesto on top of the cheese
  5. Bake or air-fry:
    • In oven: 180°C (350°F) for 8–10 minutes
    • In air fryer: 180°C for 5–6 minutes
      Until cheese is melted and bubbly.
  6. Season with Italian seasoning
  7. Optionally Garnish with fresh basil leaves and a light drizzle of olive oil.

Storage tips

  • Best Fresh: Pesto pizza toast is best enjoyed immediately while warm and crispy.
  • Short-Term Storage: Store leftovers in the fridge for up to 1 day. Reheat in the oven or air fryer.
  • Freezing Not Recommended: The texture of the bread and pesto doesn’t hold up well after freezing.
