- 2 tbsp tomato puree
- 2–3 tbsp basil pesto (store-bought or homemade)
- ¼ cup grated mozzarella or a cheddar
- 5–6 cherry tomatoes, sliced
- red onion, diced
- 1 tbsp olives
- sweetcorn
- Italian seasoning (for garnish)
Instructions
- Lightly toast the bread (optional) for a crispier base.
- Spread tomato puree over each slice of bread.
- Top with cheese, cherry tomatoes, onion, olives or other toppings.
- Spread the pesto on top of the cheese
- Bake or air-fry:
- In oven: 180°C (350°F) for 8–10 minutes
- In air fryer: 180°C for 5–6 minutes
Until cheese is melted and bubbly.
- Season with Italian seasoning
- Optionally Garnish with fresh basil leaves and a light drizzle of olive oil.
