Cookies and Cream Brownies

If you like Cookies and Cream then you will love these brownies! I decided to make these as a gift for a friend who love brownies and she absolutely loved them. These Cookies and Cream brownies turned out fudgy, decadent and rich in flavour. The addition of the crunchy biscuit and smooth filling of the cookies made the brownies extra tasty and so very moorish.

Why you’ll love Cookies and Cream Brownies

  1. Easy to make – You don’t have to follow a really complicated recipe in order to make these brownies. I’ve tried making brownies numerous times and they always turn out just as delicious as the last time. Follow the simple steps above and you should get fudgy, chocolatey and delicious brownies.
  2. Stay fresh for long – These brownies stay fresh for at least a week so you can make them ahead of time. Then you can decorate them before serving as the cookies on top of the brownies may become soft.

Why you should make Cookies and Cream Brownies

  • The perfect gift: There’s something really special about making something yourself and gifting it to someone. It’s so much more thoughtful then buying it from the shop because you can adjust the flavours to suit the person receiving the gift. Also, even if they don’t turn out perfectly, it’s the thought that counts so I’m sure they will appreciate it.
  • So fun to make: As the recipe is easy to follow, these brownies are so fun to make and it’s just a case of mixing all the ingredients in a bowl and baking. There are not specialised ingredients and I’m sure you will have most, if not all, the ingredients in the cupboard.

Top tips

  • Storage – Store in an airtight container as this will help the brownies to stay fresh for at least a week. You can also freeze them for longer storage.
  • Layering Cookies – Layer some cookies into the brownie batter and as toppings because the more the better!
  • Don’t Overmix the Batter – Mix the brownie batter just until combined. Overmixing can lead to dense brownies, so stop once the ingredients are fully incorporated.
  • Cooling Time: Allow the brownies to cool completely in the pan before cutting. This helps them set and improves the texture. Even better, chill them in the fridge to get clean and neat slices.
  • Room Temperature Ingredients – Use ingredients like eggs and butter at room temperature as this will ensure even mixing.
  • Serve with Ice Cream – Warm cookies brownies pair beautifully with a scoop of vanilla ice cream. The warm and cold combination is amazing.
