There’s something about Mini Eggs that always bring back from memories of Easter time when I was a kid. We would always have them at school, we made tiny chocolate nests with melted chocolate and cornflakes and added in a few mini eggs in the middle (so satisfying!). I saw some Mini Egg cookies on Pinterest and was so excited to try them right away (not only because I love Mini Eggs but also because they look so impressive so they would make such a lovely gift for a friend or neighbour). When I made them, I was so pleased with how they turned out so I have written my top tips below.

TOP TIPS ON MAKING THE BEST MINI EGG COOKIE
- Top with Mini Eggs: A big part of the cookie is the Mini Eggs which you garnish with on the top and so when your chopping them up be careful not to make them into chocolate powder. The first few I tried mashing but the pieces were far too small! I then started to gently cut down the middle of the Mini Egg and they looked much better.
- Find your favourite cookie dough recipe: I know I have a go to cookie recipe when I’ve tweaked over the years to make it just right, use that one! If you don’t yet have one, then pick any basic cookie recipe today and start your tweaking journey (you’ll know when it’s perfect and it will be a magical day, that I can promise)
- Leave enough room when baking: Don’t put the cookies too close together when baking, this used to wind me up so much when I first starting making cookies! I used to miscalculate how close to place them at least half a dozen times and sure enough, I would get one large cookie which I would then have to cute up with a knife. It would still be tasty but just not as aesthetically pleasing, so please, for the love of peace, space them out.

- Get creative: You can flavour your cookies with different extracts such as vanilla or salted caramel. You can also get creative with the toppings and add a drizzle of chocolate or some edible glitter for some flare.

Mini Egg Cookie Recipe
Ingredients
- 115 g Unsalted butter room temperature
- 50 g White Sugar
- 82 g Light brown sugar
- 1 Egg large, room temperature
- 1 tsp Vanilla extract
- 200 g Plain flour
- 1/2 tsp Baking soda
- 1/4 tsp Salt
- 200 g Cadbury's Mini Eggs
- 50 g Milk chocolate
Instructions
- Mix the butter and sugar together using an electric whisk on medium for a few minutes until the mixture becomes pale. Add in the egg and vanilla extract and beat until combined.
- Sift in the flour, baking soda and salt and mix until just incorporated. Add in the mini eggs and milk chocolate and mix in with a wooden spoon.
- Cover the bowl with some cling film and place into the fridge for at least an hour or freezer for 30 mins (this will make sure the cookies don’t spread out too much when baking).
- Pre-heat the oven to 180/160 Fan. Roll the cookie dough into small balls around 1 inch in size and place onto a baking tray lined with parchment paper.
- Place the cookies into the oven for 9 minutes and then take them out of the oven, place on the remaining mini egg chunks and put back into the oven for another 5 mins.
- Once they come out of the oven. allow them to cool before tucking in; they should be chewy and delicious!
