There’s something so comforting about a Fried Chicken Burger; the tender chicken and crispy coating make the perfect, simple meal option. Before I learned how to make fried chicken at home there was always something so daunting about the process. I assumed that the crispy and crunchy exterior of the chicken could only be achieved in a restaurant or takeaway. However, it’s actually a super simple process.
This is also a great meal idea for a busy work week because there are many aspects of the process that you can make ahead of time. You can make a quick marinade in the morning and allow the chicken thighs to marinade in the mixture in the fridge for a few hours. The coating can also be made ahead of time and stored in an airtight container. So then when its time to fry the chicken, its just a case of the coating the marinated chicken and frying. There are a few tips and tricks for making the crispiest burger which I have listed below.

HOW TO MAKE THIS FRIED CHICKEN BURGER
- The first step is to make the marinade by adding all of the marinade ingredients into a bowl and mixing until they are fully combined.
- Then add the chicken thighs into the marinade and cover with cling film. Be sure to refrigerate overnight or for least 2 hours as this helps the chicken to soak up all the lovely flavours.
- You will then make the coating by mixing all ingredients into a bowl and setting aside.
- Once marinated, take one chicken thigh out and put into the coating mix. Dip this back into the marinade and then back into the coating.
- Fry in oil for 5-7 mins until the chicken is cooked and the coating is crispy. Allow to rest for a few mins before serving.

Milk & Lemon – You can use buttermilk but if you don’t have any to hand then use milk with a little lemon. The combination should work well and you’ll have a strong base for your marinade.

Chicken thighs – Thighs or breast will work just fine. Most people prefer thighs because they tend to be more moist after frying.
Coating
Plain Flour – This will be the base of your coating
Cornflour – To make the coating really crispy on the chicken
Seasoning – Salt, Garlic Powder, Paprika, Black Pepper, Oregano, Cajun Seasoning, for maximum flavour!
TIPS FOR CRAFTING THE BEST FRIED CHICKEN BURGER
The key to a perfectly fried chicken burger is achieving that golden-brown, crunchy exterior without compromising the juicy interior.
- Temperature Control: Maintain a consistent oil temperature of around 175°C (350°F). If it’s too hot then coating may burn before the chicken is cooked. If it’s too cold, the chicken may absorb excess oil which won’t take very good.
- Drain Excess Oil: Once fried to golden perfection, place the chicken on a wire rack to drain excess oil. This prevents the burger from becoming soggy when you bit into it.
- Choose the Right Cut of Chicken: Opt for boneless, skinless chicken breasts or thighs for the juiciest and most flavourful fried chicken. Thighs, in particular, tend to stay moist during frying but I’ve tried both and they’re equally as delicious.

- Double Dipping for Crispy Coating: Dip the marinated chicken into the seasoned flour mixture, then back into the milk mixture, and again into the flour. This double-dipping technique enhances the crispiness of the coating and will elevate the taste of your burger.

- Cheeses: Melted cheese is the glue that brings it all together. I went for a classic American cheese slice because I think it pairs really well with the burger.
- Serve Immediately: Assemble and serve the fried chicken burger immediately as this ensures that the chicken retains its crispiness. If you leave the chicken to rest for too long after frying then it can become a little soggy.
