Egg Tortilla Wrap
When I try a new recipe and enjoy it, I literally have it every day until I find something new. I’m currently obsessed with this egg tortilla wrap and I’ve been having it for lunch every day. It’s a really simple recipe which is really quick and easy to whip up.
During the work day, I usually go for a walk at lunchtime so I end up rushing to make a lunch before I need to get back to work. This meal is perfect because it’s healthy, tasty and real quick to make. This is quite a versatile dish because you can add in any spices, veggies or herbs and it can change the taste completely. I make my eggs spicy with a little chilli powder and cumin because I like my meals to have a kick and coriander is my herb of choice so I usually add that into most of my recipes.
The tortilla also gets super crispy when its cooked which is perfect alongside the soft egg. I use a little coconut oil to cook my eggs and the same oil to toast the wrap as well because coconut oil works so well! Finally, a small salad on the side makes the perfect addition because it will bring some freshness to the dish.

HOW TO MAKE THIS EGG TORTILLA EGG WRAP
When you’re short on time but want a protein filled and healthy meal, this is my go to recipe. It’s a simple recipe filled with great flavour and texture.
- To make this egg tortilla wrap, add a tablespoon of oil into a pan and add ½ tomato and ½ onion. Slice them up however you like but I personally prefer dicing them.
- Add in ¼ tsp salt and ½ tsp chilli powder and mix everything together.
- Continue cooking until the tomato and onions are very soft. If you prefer having a bit of crunch from the vegetables then leave them a little harder. I like to cook them right down to a consistency of a puree.
- Transfer the mixture to a bowl and crack into 2 eggs and mix thoroughly. You want to do this quickly because you don’t want the eggs to cook in the bowl.
- To the pan add a tablespoon of oil and pour in the egg mixture.
- Place the tortilla on top of the egg and press down gently. After a minute, flip the egg and allow the tortilla to get toasted on the pan.
- Fold in half and remove from the pan; serve with a side salad and enjoy!
