Cookie Coating

  • 1 tbsp Sugar
  • 1 tbsp Brown Sugar
  • 1/2 tsp Cinnamon

Buttercream

  • 100 g Unsalted Butter softened
  • 200 g Icing Sugar
  • 1 tbsp Milk
  • 1/2 tsp Cinnamon

How To Make Churro Cookies

  • Pre-heat the oven at 175°C and line a baking tray with baking paper.

Cookie

  • Whisk together the butter, sugar and brown sugar, then add in the egg and vanilla extract and whisk until you get a light and fluffy consistency.
  • Sift in all of the dry ingredients (plain flour, cornflour, baking soda, baking powder, salt and cinnamon) and mix until combined.

Cookie coating

  • Mix together the sugar, brown sugar and cinnamon in a bowl and set aside.
  • Roll 30g cookie dough balls and roll in the coating mixture.

Assemble

  • Place the cookie dough balls onto the lined baking tray and flatten slightly.
