Tips for the perfect Brown Butter Cookies
- Start with Good Quality Butter: Use high-quality unsalted butter for the best flavour. The better the butter, the richer your brown butter will be.
- Choose the Right Pan: Use a light-coloured or stainless steel pan for browning the butter. This makes it easier to monitor the colour change, as dark pans can make it challenging to see the browning process.
- Use Unsalted Butter: Brown unsalted butter to have more control over the salt content in your cookies. This way, you can adjust the salt to your taste in the cookie dough.
- Cut Butter into Even Pieces: Cut the butter into even-sized pieces before melting. This ensures that the butter browns uniformly.
- Keep an Eye on the Browning Process: Brown the butter over medium heat and keep a close eye on it. Swirl the pan occasionally to ensure even browning. The butter will go through stages of melting, foaming, and browning. Once you see golden specks and smell a nutty aroma, remove it from heat.
More tips
- Transfer to a Different Container: As soon as the butter reaches the desired colour, transfer it to a heatproof bowl to prevent carryover cooking in the hot pan.
- Cool the Brown Butter: Allow the brown butter to cool to room temperature before using it in your cookie dough. You can speed up the process by placing it in the refrigerator for a short time, but it should not be hot when added to the dough.
- Chill the Dough: After mixing the cookie dough, refrigerate it for at least 30 minutes. Chilled dough helps prevent cookies from spreading too much in the oven, resulting in thicker, chewier cookies.
- Experiment with Sugars: Try using a combination of brown and white sugars in your cookie dough. Brown sugar complements the nutty flavour of the brown butter and adds moisture to the cookies.
- Don’t Overmix the Dough: Mix the cookie dough just until the ingredients are combined. Overmixing can lead to dense cookies.
