- Press firmly into an 8 inch cake tin lined with baking paper, then set aside.
Cheesecake Mixture
- Whisk together the double cream and icing sugar for a few minutes until the cream thickens.
- Add in the cream cheese, chopped biscuits and vanilla extract and mix until combined.
- Pour the mixture into the baking tin and smooth out. Let this set up in the fridge for at least 2 hours before serving.
