Top Tips
- Cookie Base:
- Cookie Dough: Ensure the dough is evenly pressed into the pan to create a uniform base.
- Prepare the Cheesecake Layer Carefully:
- Mix Gently: Beat the cream cheese, sugar, and eggs just until smooth and creamy. Overmixing can incorporate too much air, which may cause cracks during baking.
- Layering Technique:
- Even Distribution: Spread the cookie dough evenly in the baking pan and press it down firmly to create a solid base. Pour the cheesecake batter over the cookie base and spread it evenly.
- Marbling Effect: For a marbled effect, dollop extra cookie dough on top of the cheesecake layer and gently swirl it with a knife or skewer.
- Baking Tips:
- Check for Doneness: The bars are done when the edges are set and the centre has a slight jiggle. They will firm up as they cool. Overbaking can result in a dry texture.
- Cooling and Cutting:
- Clean Cuts: Use a sharp knife dipped in hot water and wiped clean between cuts to achieve neat, clean slices. This prevents the cheesecake from sticking to the knife and ensures the layers stay distinct.
- Cool Completely: Allow the bars to cool completely in the pan before cutting. For best results, chill them in the refrigerator for a few hours or overnight. This helps the layers set and makes slicing easier.
