Top Tips On Making The Best Chocolate Caramel Shortbread Cookies
- Use Good Quality Ingredients
- Pick your favourite chocolate bar to coat the top
- Use salted caramel as opposed to regular caramel
- Chill the dough after cutting into circles
- Pre-heat the oven to ensure the biscuits cook through
- Make sure all the cookies are the same thickness to ensure the biscuits cook evenly
Ingredients You’ll Need
Shortbread Biscuit
- 240 g Butter unsalted, softened
- 75 g Icing Sugar
- 240 g Plain Flour
- 1 tsp Vanilla Extract
Toppings
- 100 g Caramel
- 170 g Milk Chocolate melted
How To Make Chocolate Caramel Shortbread Cookies
Shortbread Biscuits
- Pre-heat the oven to 180℃/160℃ Fan.
- Mix together the softened butter, icing sugar, plain flour and vanilla extract until you get a breadcrumb consistency.
- Use your hands to form a smooth dough.
- Roll out the dough to around 1 inch thick and cut small circles.
- Place onto a lined baking tray and place them in the fridge for 30 mins to firm up.
- Then place them into the oven at 160°C for 15 mins.
- Once baked, remove from the oven and allow them to cool completely.
Toppings
- Cover the biscuits with salted caramel and leave to rest for 10 mins.
- Cover once again with melted milk chocolate and allow the cookies to rest so that the chocolate hardens.
