STREET CORN
This is such a simple recipe but its so good! I generally love sweetcorn so I knew I was going to love this recipe. The first time I had street corn was when I was out and about shopping in a local shopping centre and there was a street corn stand. I decided to buy some because I was feeling snackish and I absolutely love corn.
I watched the guy make it in front of me and it was literally so easy to make. I tried it and as a I suspected it was delish! I wanted to make it again at home because I thought it would be great in a salad. The guy at the stand used margarine but I decided to use coconut oil because it’s my favourite oil to cook with and it gives food a nice flavour.
I played around with the recipe by adding salt, chilli powder/flakes and other spices and adjusted the measurements each time I made it until I was happy with it. I really love this as a quick snack because it sweet, crunchy and perfect spiced and it’s a great addition to a meal.

- Heat up some oil in a pan over a medium heat.
- Pour in the tin of sweetcorn and add in the rest of the ingredients.
- Cook the sweetcorn for 5-10 minutes until the sweetcorn softens and enjoy as a side dish or snack.
