  • 50 g White Sugar
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 225 g Plain Flour
  • 1 tbsp Cornflour
  • 1/4 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/2 tsp Cinnamon Powder

Cinnamon Coating

  • 2 tbsp Brown Sugar
  • 2 tbsp White Sugar
  • 1/2 tsp Cinnamon Powder

How to make Soft Cinnamon Cookies

  1. Whisk together the softened butter, brown and white sugar in a bowl.
  2. Add in the egg and vanilla extract and whisk until combined.
  3. Sift in the plain flour, cornflour, baking soda, baking powder and cinnamon powder and mix until combined.
  4. Once you get a cookie dough set aside to make the cinnamon coating.
  5. To make the cinnamon coating mix together the brown sugar, white sugar and cinnamon powder.
  6. Roll 85g dough balls and roll in the cinnamon coating so that the dough ball is fully covered.
  7. Place the dough balls on a lined baking tray and gently flatten each one with a plate or back of a glass.
  8. Place the baking tray into a pre-heated oven at 175℃ for 12 mins.
