Top Tips
Use High-Quality Chocolate:
- Pick your favourite chocolate for the base of the Rocky Road because it will be the main flavour of the dish. Pick a high quality chocolate as this will give you the best taste and texture.
Mix Textures and Flavours:
- Incorporate a variety of textures and flavours to make your Rocky Road more interesting. You can add marshmallows, biscuits, nuts or dried fruits; whatever you’d like.
Melt Chocolate Gently:
- When melting chocolate, do it gently over a double boiler or in short 30 second bursts in the microwave, stirring frequently to avoid scorching. Overheating can cause the chocolate to seize, ruining its smooth consistency.
Prepare Your Pan Properly:
- Line your baking pan with baking paper or cling film, leaving an overhang on the sides. This makes it easier to lift the Rocky Road out of the pan once it’s set and simplifies cutting into pieces.
Cool Completely Before Cutting:
- Allow the Rocky Road to cool and set completely at room temperature or in the refrigerator before cutting it into bars. This ensures clean cuts and prevents the chocolate from melting or becoming too soft.
