FRESH MINT AND LEMON JUICE
Nothing reminds me of the summer more than this Fresh Mint and Lemon Juice. My husband concocted this deliciously fresh and zingy drink in the middle of the summer and it’s still my number favourite drink ever. He’s been growing mint leaves and the care that goes into it is astounding. Our mint plant grew so big and tall that he decided to chop off all the mint and leave them to dry so we could enjoy them throughout the year. It was then that he decided to throw some mint leaves into a blender with some lemon juice, salt and sugar and a showstopper was born! I couldn’t believe that such a simple recipe tasted so good. I think the salt makes the world of difference even though its only a small amount.
We have since re-made that mint and lemon drink countless times and its always a staple at dinner parties. I remember a few summers ago, I invited all of my family to mine for a garden pizza party. We decided on pizza because I wanted to spend time with the family without feeling stressed about cooking a huge meal. For a starter, I made a cheese board for people to snack on before dinner which included fruits, cheese, crackers and because there were going to be lots of kids, I added lots of other fun snacks as well.
We used sofas, chairs and tables to make a makeshift dining table in the garden and the weather was absolutely perfect. It was such a lovely atmosphere and it was one of those moments where I just looked at how beautiful my life was and I was so grateful!
My husband made a mint and lemon juice and a mango milkshake and they were both a hit. We drank, we ate and talked until the sun started to come down. When it was time for everyone to go home, we thanked everyone for coming and wished them a safe drive home. My husband and I then flopped onto the sofa together and felt an immense sense of gratitude for having such a wonderful life.
