Chocolate Chip Cookies
Ingredients
- 115 g Unsalted butter room temperature
- 50 g White Sugar
- 82 g Light brown sugar
- 1 Egg Large, room temperature
- 1 tsp Vanilla Extract
- 200 g Plain Flour
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 100 g Milk Chocolate
Instructions
- Mix the butter and sugar together using an electric whisk on medium for a few minutes until the mixture becomes pale. Add in the egg and vanilla extract and beat until combined.
- Sift in the flour, baking soda and salt and mix until just incorporated. Add in the milk chocolate pieces/ chocolate chips and mix in with a wooden spoon/ spatula.
- Cover the bowl with some cling film and place into the fridge for at least an hour or freezer for 30 mins (this will make sure the cookies don’t spread out too much when baking, leaving them overnight in the fridge would be best).
- Pre-heat the oven to 180/160 Fan. Roll the cookie dough into small balls around 1 inch in size, gently flatten and place onto a baking tray lined with parchment paper.
- Place the cookies into the pre-heated oven for 15 minutes.
- Once they come out of the oven. allow them to cool before tucking in; they should be chewy and delicious!
My thoughts…
There something so comforting and therapeutic about making cookies. I don’t know what it is but every time I make them, I just feel genuine joy and I love it! Often times I’ll make cookies with absolutely no intention of eating them, I just love the process. Then I gift them to a friend or take them over to my mums house and everyone’s happy; win, win!
There was a while back I remember this specific night when my husband was abroad visiting family and I was home alone. I had finished dinner and I was winding down for the evening, watching a little T.V and working on my blog and I had such an urge to make cookies. I decided to make brown butter cookies because they were all over the internet at that point and it was genuinely such a fun evening.
I just stood in my kitchen measuring the flour and melting the butter over the stove. I cut the chocolate bar into chunks and mixed all the ingredients by hand. There was something so magical and peaceful about the night. I baked the cookies and placed them on a wire rack to cool, they turned out so well and my house smelled like a bakery.
That was the first time I realised the true value of hobbies and baking is probably my biggest hobby. There’s something so pure about doing something you enjoy for no reason whatsoever; just simply because it brings you joy.
That remains one of my favourite memories of all time, which sounds a bit strange because I was literally by myself at home, barefoot in my kitchen. It was far more than just simply baking a batch of cookies, it was about completely immersing myself into something I loved and mindfully performing each step.
