Chicken Skewers

CHICKEN SKEWERS

When I don’t know what to make for dinner and I’m running low on time, these chicken skewers are usually my go to. Not only are they really easy to prepare and cook, they also taste delicious. This is the kind of meal which looks like you have put in a lot of time and effort when in reality, it may be the least labour intensive dinners during the week. To make the chicken skewers you can change up the flavours quite easily and you can replace the breast with thigh piece if you wish. I personally like the flavour of breast in this recipe because the chicken stays moist and juicy after cooking and it’s also a little healthier. I used the air fryer to cook these chicken skewers but you can make them in the oven as well (you may need to adjust the timing however because my air fryer tends to cook chicken a little faster than the oven).

  • Perfect for dinner parties – This is a great recipe for dinner parties because its easy to follow and doesn’t require many ingredients.

HOW TO MAKE CHICKEN SKEWERS

There are three simple steps to making this delicious, healthy and flavourful chicken recipe. It’s made in the airfyer and the chicken tastes crispy and moist. If you don’t have an airfryer then don’t worry, you can still make this in the oven but it won’t be as crispy.

  1. Start by cutting one chicken breast into cubes and place into a bowl. Add in the salt, pepper, lemon, garlic, oregano, parsley, coriander, olive oil, chicken seasoning. Feel free to adjust the quantities and add in or remove anything to suit your preference. I decided to leave out any spice but if you want a kick then add in some chilli flakes. Mix everything thoroughly until the chicken is fully coated.
  2. If you don’t have time to marinade the chicken you can cook it straight away and it still tastes really good. Put the chicken onto skewers and place into an airfyer at 180°C for 20 mins, flipping halfway through.
  3. You can serve this with anything you like, such as cous-cous, rice or in a wrap. I love it with some plain or vegetable cous-cous and a side salad. Adding hummus or Greek yoghurt tastes great too.

INGREDIENTS YOU’LL NEED

Chicken Breast – You can substitute this with chicken thighs but for leaner and healthier choice, breast will be the way to go.

Seasonings – Salt, Oregano, Parsley, Garlic powder, Ground Coriander, Chicken seasoning, Black pepper – You can really pick and choose whichever seasonings and herbs you want

Olive oil – Use a good quality Olive oil because it impact the overall flavour of the chicken.

Squeeze of Lemon – Lemon is great for adding more flavour into the dish.

TOP TIPS FOR THE BEST CHICKEN SKEWERS

  1. Choose the Right Chicken: Opt for boneless, skinless chicken thighs or breasts cut into cubes.
  2. Uniform Size: Cut the chicken into uniform-sized pieces to ensure even cooking. This helps prevent some pieces from being overcooked while others are undercooked.
  3. Marinate for Flavour: Marinate the chicken for at least 30 minutes (or preferably longer) before grilling. This imparts flavour and helps tenderise the meat. Use a marinade with a combination of oil, acid (such as lemon juice or vinegar), herbs, and spices.
  4. Soak Wooden Skewers: If using wooden skewers, soak them in water for at least 30 minutes before threading. This prevents them from burning during grilling.
  5. Evenly Thread the Skewers: Thread the chicken and vegetables onto the skewers evenly. This ensures that each skewer has a balance of chicken and veggies, promoting consistent cooking.

MORE TIPS

  1. Check for Doneness: Ensure the chicken is fully cooked by checking its internal temperature. It should reach 165°F (74°C); avoid overcooking to prevent the chicken from drying out.
  2. Rest Before Serving: Allow the skewers to rest for a few minutes before serving. This helps the juices redistribute, ensuring the chicken remains juicy.
  3. Garnish and Serve with Sauce: Garnish the skewers with fresh herbs like cilantro or parsley before serving. Offer a flavourful sauce or dip on the side, such as tzatziki, peanut sauce, or chimichurri.
  4. Get Creative with Spices: Experiment with different spice blends and herbs in your marinade. Whether it’s a Mediterranean-inspired blend or a smoky barbecue rub, spices can elevate the flavour of your chicken skewers.
  5. Quality Ingredients: Use high-quality, fresh ingredients for the best flavour and texture.

CONCLUSION

These chicken skewers are a quick, easy and delicious. They’re a great healthy recipe for during the week because they only require a few ingredients and can be cooked in the air fryer. You can prep these in advance by marinating the chicken in the seasonings and herbs and then pop them in the air fryer whenever you get hungry. This makes them perfect for work nights where you don’t have much time to prepare a big meal after a long day of work.  The seasoning can be customised to your own preference and you can add in the herbs and spices of your choice. If you love spicy food then you can add in some chilli powder or chilli flakes and if you prefer a more mild flavour then you can leave them out. Either way I’m sure they will taste amazing!
