When I don’t know what to make for dinner and I’m running low on time, these chicken skewers are usually my go to. Not only are they really easy to prepare and cook, they also taste delicious. This is the kind of meal which looks like you have put in a lot of time and effort when in reality, it may be the least labour intensive dinners during the week. To make the chicken skewers you can change up the flavours quite easily and you can replace the breast with thigh piece if you wish. I personally like the flavour of breast in this recipe because the chicken stays moist and juicy after cooking and it’s also a little healthier. I used the air fryer to cook these chicken skewers but you can make them in the oven as well (you may need to adjust the timing however because my air fryer tends to cook chicken a little faster than the oven).

There are three simple steps to making this delicious, healthy and flavourful chicken recipe. It’s made in the airfyer and the chicken tastes crispy and moist. If you don’t have an airfryer then don’t worry, you can still make this in the oven but it won’t be as crispy.
- Start by cutting one chicken breast into cubes and place into a bowl. Add in the salt, pepper, lemon, garlic, oregano, parsley, coriander, olive oil, chicken seasoning. Feel free to adjust the quantities and add in or remove anything to suit your preference. I decided to leave out any spice but if you want a kick then add in some chilli flakes. Mix everything thoroughly until the chicken is fully coated.
- If you don’t have time to marinade the chicken you can cook it straight away and it still tastes really good. Put the chicken onto skewers and place into an airfyer at 180°C for 20 mins, flipping halfway through.
- You can serve this with anything you like, such as cous-cous, rice or in a wrap. I love it with some plain or vegetable cous-cous and a side salad. Adding hummus or Greek yoghurt tastes great too.

Chicken Breast – You can substitute this with chicken thighs but for leaner and healthier choice, breast will be the way to go.
Seasonings – Salt, Oregano, Parsley, Garlic powder, Ground Coriander, Chicken seasoning, Black pepper – You can really pick and choose whichever seasonings and herbs you want
Olive oil – Use a good quality Olive oil because it impact the overall flavour of the chicken.
Squeeze of Lemon – Lemon is great for adding more flavour into the dish.
