- 115 g Unsalted Butter softened
- 100 g Brown Sugar
- 50 g White Sugar
- 1 Egg
- 1 tsp Vanilla Extract
- 225 g Plain Flour
- 1 tbsp Cornflour
- 1/4 tsp Baking Soda
- 1/2 tsp Baking Powder
- 1/2 tsp Cinnamon Powder
Cinnamon Coating
- 2 tbsp Brown Sugar
- 2 tbsp White Sugar
- 1/2 tsp Cinnamon Powder
How to make Soft Cinnamon Cookies
- Whisk together the softened butter, brown and white sugar in a bowl.
- Add in the egg and vanilla extract and whisk until combined.
- Sift in the plain flour, cornflour, baking soda, baking powder and cinnamon powder and mix until combined.
- Once you get a cookie dough set aside to make the cinnamon coating.
- To make the cinnamon coating mix together the brown sugar, white sugar and cinnamon powder.
- Roll 85g dough balls and roll in the cinnamon coating so that the dough ball is fully covered.
- Place the dough balls on a lined baking tray and gently flatten each one with a plate or back of a glass.
- Place the baking tray into a pre-heated oven at 175℃ for 12 mins.
- Remove the tray from the oven and allow the cookies to rest for a few minutes before tucking in.
