Indulgent Chocolate Brownies

Have you been searching for the perfect brownie recipe? There as so many different textures when it comes to brownies, so let me tell you what I think the perfect brownie consists of. Firstly, I know people love a fudgy brownie but it can’t be too fudgy, I don’t want it to feel undercooked! I personally love chocolate chunks in a brownie; they add so much to the texture and flavour, especially if there’s an assortment of milk, white and dark chocolate. With regards to flavour, I love a rich chocolatey flavour with a hint of salt to balance it out and finally, I like the edges to be a bit more dense and the middle to be fudgy/cakey.   • Easy to make – These brownies are really easy to make and it is my go to recipe for brownies. I’ve experimented with different recipes and adjusted the measurements and I think I’ve created the best brownie recipe.

  • Store for at least a week – If you keep them in an airtight container, they can be stored for at least a week but I’m sure they’ll all be gone by then anyway!

Top tips for getting the perfect chocolate brownie:

  1. Use good quality ingredients –  I know for most of us baking is a hobby and so can seem like you’re spending quite a lot of money for no real reason but this one is honestly a game changer. It can transform your brownies from good to great. Also, just a side note, don’t feel guilty for spending money on a hobby! I used to feel so guilty when I would be ingredients for baking or buy a new set of watercolours because I also viewed them as a waste and a little selfish. I’ve recently completely changed that mindset and I don’t feel guilt for buying something for myself. Hobbies are amazing! They allow us to focus solely on one thing which we genuinely enjoy and it can be so therapeutic! (sorry for the rambling)
  2. Wet/Dry ingredients – Mix the wet ingredients together first and then add dry ingredients (it does actually make a difference)
  3. Sift everything – Flour, baking soda, cocoa powder; your brownies will come out so much smoother and tastier.

More tips

  1. Add a little salt – This one has been a game changer for me because the salt so delicately transforms the brownies from too sweet to perfectly balanced.
  2. Get creative – Brownies are so versatile that you can add so many different flavours: from salted caramel to pecans, walnuts and pistachios.
  3. Experiment with ingredients – I remember when I followed a recipe of brownies to a T and never deviated from it and they always turned out now, then one day I ran out of eggs so put one less egg in and added a little milk to substitute the moisture and oh my gosh, they turned out so much better! That’s when I started to get a bit more adventurous when baking and its not only made baking more fun but (most of the time) they come out so good.

Ingredients
  

  • 150 g Unsalted butter
  • 250 g Sugar
  • 100 g Plain Flour
  • 30 g Cocoa Powder
  • 3 Eggs medium
  • 1/2 tsp Salt
  • 1 tsp Vanilla Extract
  • 100 g Milk Chocolate melted
  • 100 g Milk Chocolate chunks

Instructions
 

  • Pre-heat the oven to 180/170 fan Celsius and line an 8 inch baking tin with parchment paper.
  • Mix the butter and sugar with an electric hand whisk (you can use a normal whisk or wooden spoon) and then add in the eggs. Beat the mixture until thick and fluffy.
  • Add in the melted chocolate and vanilla essence and mix in with the whisk.
  • Sift in the flour, sugar and baking powder and mix in with a spatula or wooden spoon until combined.
  • Mix in the chocolate chunks and then pour the mixture into the lined baking tin.
  • Place into a pre-heated oven for 31 mins. Once baked, allow the brownies to cool in the tin before serving.

Notes

* For the best results, once cooled. leave the brownies in the tin, cover them with cling film and leave them in the fridge overnight.
